There are a lot of vegetables that are non-starchy and low on the carb but they contain a lot of high-quality nutrients and vitamins. Vegetables and other plants contain fiber, which your body doesn’t digest and absorb like other carbs.
Cooked Brussels Sprouts, Raw Spinach are examples of these kinds of vegetables with high-quality fiber and low carb. Kale, broccoli, and cauliflower are also on this list.
